Friends, get ready to awaken your senses with this recipe for quinoa with winter vegetables, a simple but refined dish, like a sweet melody that can be danced with your eyes closed.
Ingredients :
• 200g quinoa
• 1 butternut squash, peeled and diced
• 2 carrots, peeled and cut into slices
• 2 parsnips, peeled and cut into sticks
• 1 red onion, chopped
• 3 tablespoons of olive oil
• 1 liter of vegetable broth
• Salt pepper
• A few sprigs of fresh thyme
Preparation :
1. In a saucepan, sweat the onion with a drizzle of olive oil and a pinch of salt. Add a touch of poetry and let it melt until the onion becomes translucent like a romantic's heart.
2. Add the quinoa, toast it lightly so that it becomes as golden as the midday sun on the Balagne.
3. Pour the hot broth over the quinoa, like a bubble bath on a winter evening, and simmer gently for 15 minutes.
4. Meanwhile, take the winter vegetables, put them in a roasting dish with a good drizzle of olive oil, salt, pepper, and a hint of thyme. We put them in the oven at 200°C, like sending a hot kiss, for 25 minutes until they are tender and caramelized.
5. When everything is ready, mix the quinoa and vegetables with the elegance of a dance step, checking the seasoning like you check your tie before a date.
6. Serve hot, with a touch of humor and a good bottle of wine. As Gérard Darmon would say, it’s a dish that warms the heart and tickles the taste buds!
Savoring with a smile is always better!
